Nestled in the heart of the Val d'Orcia, the Pastificio Panareseappears as a small artisan plant where pasta is produced coming directly from the surrounding wheat fields. Here a large family works producing every day kilos and kilos of pasta with love and passion and - above all - respecting the work and the land. It is this harmony between people and the territory that makes Pasta Panarese so special.
High quality of raw materials. This is the first commandment of the Panarese Pastificio.
No persuasion needed, we go straight to the point. It's all very simple. The wheat fields from which the bran is produced are all here, a few kilometers from the pasta factory. They appear like golden expanses, thus making an already unique landscape even more enchanting. The Val d'Orcia is a Unesco Site and has been sung by poets and artists for centuries.
The dies are many, all in bronze.. Inside the pasta factory there is a small laboratory to clean them and to replace the pieces that are consumed with daily work.
And finally, the most important part: the Drying. For us it has a capital D because the quality of the pasta lies entirely in the drying recipes. Together with slow times, humidity and controlled and constant temperatures.
This is how pasta maintains its nutritional, organoleptic and healthy qualities, its taste and its poetry.
After all, we define ourselves as "Pasta Farmers".
